2 T butter
2 T flour
1 c milk
3 oz shredded cheddar
½ t salt
Dash cayenne
3 eggs, separated
Melt butter over medium heat, blend in flour. Stirring constantly, add milk and cook until thickened. Remove from heat and add cheese, salt, and pepper. Set aside.
Whip egg whites until stiff.
Pace yolks in clean bowl, Beat one minute at medium speed, reduce to low speed and mix in cheese mixture, about 30 seconds. Add egg whites and mix 15 seconds longer.
Pour mixture into greased 1-quart souffle pan and bake at 325 for 40-45 minutes.
