1/2 c unsalted butter, room temperature
1 c sugar
Zest of 2 lemons
1 egg
1/4 c lemon juice
1-1/2 t baking powder
3 c flour
1/4 t salt
Preheat oven to 375.
Combine butter, sugar and zest in a bowl and beat at high speed until light and fluffy. Adjust speed to medium, beat in egg and lemon juice. Combine flour and salt and add incrementally. Dough should be stiff.
Place dough in desired cookie barrel and attach desired disc. Press dough onto ungreased sheets, about 1 inch apart. Bake 10 minutes, until golden brown. Cool on wire rack. Store in airtight container.
